Key Lime Pie Bars

Try this version of Key lime pie for a refreshing summer dessert.

Key Lime Pie Bars

1 1/4 cup graham crackers, crushed into crumbs

1/3 cup sugar

5 Tablespoons butter, melted

3 egg yolks

1 1/2 teaspoons lime zest

2/3 cup Key lime juice (regular lime juice also works)

1 can sweetened condensed milk

1/4 cup heavy cream, whipped


Preheat oven to 350º F.


Combine graham cracker crumbs, sugar and butter. Press into an 8- or 9-inch square glass dish. Bake 10 minutes. Let cool completely.


Mix egg yolks and lime zest with an electric mixer on high for at least 5 minutes. Add condensed milk slowly while mixing on a lower setting. Mix until thick. Add lime juice, and mix for another minute.


Using a spatula, spread filling over crust. Bake for 10 minutes.


Refrigerate for at least 4 hours.


Top with whipped cream and a thin lime wedge for garnish.
